Potato, Pepper, Kielbasa Casserole Tell a Friend

  • 2 - large bell peppers (red or green), cut into strips
  • 2 - medium onions, cut into wedges
  • 1 pounds - red-skin potatoes
  • 12 ounces - Kielbasa, cut into 1/2-inch pieces
  • 1/4 teaspoons - salt and pepper
  • 1/4 cups - olive oil
  • 1 cups - heavy cream
  • - Parmesan, for topping
  • Directions:

    Combine peppers, onion, potatoes and Kielbasa with salt and pepper and oil.

    Place in 1-1/2 quart covered casserole and bake at 350 degrees F for 1 hour.

    Pour in cream and bake 10 minutes longer. Sprinkle with Parmesan.
