Ingredients:

  • 2 cups - Flour
  • 2 cups - Sugar
  • 2 teaspoons - Baking Soda
  • 2 teaspoons - Vanilla
  • 2 - Eggs
  • 1 cans - (16 oz.) Crushed Pineapple, (juice & all)
  • 1/2 cups - Chopped Nuts, (suggest pecans)
  • 1 - 8 oz. Cream Cheese, softened
  • 2 cups - Confectioners' Sugar
  • 2 teaspoons - Vanilla
  • 1/4 cups - Butter, (1/2 stick) softened
  • Directions:

    In a large mixing bowl, mix together flour, sugar, baking soda, vanilla, eggs, pineapple & nuts.
    Bake in greased 10x15 (or 9x13) sheet cake pan in a 350 degree oven for 20 to 25 minutes.
    Frosting - Combine the cream cheese, confectioners' sugar, vanilla & margarine; frost the cake while it is still warm.

    Notes

    Try using 1 t. vanilla & 1 t. of pineapple extract for a treat.
    I love a cream cheese frosting, but never put it on a cake while hot. This really brings out the flavor.
