Pear and Walnut Mixed Greens Salad with Balsamic Vinaigrette Tell a Friend

  • 2 tablespoons - butter
  • 1/2 cups - chopped walnuts
  • 3 tablespoons - brown sugar
  • - mixed salad greens such as romaine, leaf lettuce, Boston lettuce
  • 1 - firm ripe pear (Bosc or Bartlett are good choices)
  • 3 - scallions, chopped
  • 3 ounces - to 4 ounces crumbled Blue cheese
  • Balsamic Vinaigrette Dressing
  • 2 tablespoons - sugar
  • 1 teaspoons - dry mustard
  • 1/2 teaspoons - seasoned salt
  • 1/4 teaspoons - freshly ground black pepper
  • 3 tablespoons - balsamic vinegar
  • 1/2 teaspoons - onion juice
  • 1/2 cloves - garlic, crushed
  • 3/4 cups - salad oil
  • Directions:

    To prepare Salad:
    Melt butter in heavy skillet over medium heat; add walnuts and brown sugar. Saute until nuts begin to soften; remove from pan and cool.

    Wash and drain lettuce. Tear into bite-size pieces and place in large bowl.

    For Dressing:
    Combine dry mustard, seasoned salt and pepper in a small bowl. Stir in vinegar, sugar, onion juice and garlic. Let stand 1 hour. Just before serving, pour through a wire-mesh strainer into a small bowl to remove garlic. Beat in olive oil with a wire whisk, pour over salad and toss.

    At serving time, core pear and cut into pieces. Toss lettuce, pear, scallions, walnuts and cheese with Balsamic Vinaigrette. Serve immediately.
