Pasta with Spinach, Sausage and Roquefort Cream Sauce Tell a Friend

Ingredients:

  • 1/4 cups - olive oil
  • 4 ounces - chopped sausage
  • 8 ounces - mushrooms, sliced
  • 2 bunches - fresh spinach, stemmed
  • 2 cloves - garlic, minced
  • 1/4 cups - chopped walnuts
  • 2 cups - whipping cream
  • 4 ounces - Roquefort cheese
  • 2 teaspoons - Dijon mustard
  • 1 pounds - fettuccine, cooked
  • Directions:

    Saute sausage for about 5 minutes. Remove.

    Add mushrooms; cook for 2 minutes. Add spinach and cook until wilted. Add garlic and walnuts; increase heat. Add cream and Roquefort cheese; cook for 10 minutes.

    Add sausage and mustard. Season with salt and pepper. Serve over fettuccine.
