Pasta Fagioli (a la Olive Garden) Tell a Friend

Ingredients:

  • 1 pounds - Ground beef, 1 to 1 1/3 lb
  • 1 cups - White onion, diced
  • 1 cups - Celery, diced
  • 1 cups - Matchstick carrots
  • 15 ounces - Diced tomatoes, 1 can
  • 15 ounces - Dark red kidney beans, 1 can
  • 15 ounces - Cannellini beans, 1 can
  • 1 jars - Spaghetti sauce
  • 8 cups - Beef broth/stock
  • 1 teaspoons - Dried oregano
  • 3/4 teaspoons - Ground black pepper
  • 1/2 teaspoons - Tabasco/other hot sauce
  • 1 cups - Ditalini or other small pasta
  • 1/3 cups - Fresh parsley, minced
  • Directions:

    1. In a large pot, heat ground beef over medium heat until beef begins to brown. Add onions, carrots, celery and tomatoes and simmer for about 10 minutes.
    2. Drain and rinse beans and add to pot. Add beef broth, oregano, pepper, spaghetti sauce and noodles. Simmer until vegetables are tender and noodles are cooked, about 45 minutes.
    3. Stir in fresh parsley. Serve and enjoy.
