Ingredients:

  • 2 packages - 9-oz each frozen Rock Lobster Tails
  • 1 whole - Broiler-Fryer (2.5 to 3.5 lbs.), Cut up
  • 1 tablespoons - Flour
  • 3 tablespoons - Olive oil
  • 1 1/2 teaspoons - Salt
  • 1/4 teaspoons - Pepper
  • 1/2 cups - Frozen chopped onion
  • 1 whole - Tomato, Cut in eights
  • 1/2 teaspoons - Garlic powder
  • 1/4 teaspoons - Saffron
  • 2 cans - 13 3/4-oz each Chicken broth
  • 1 3/4 cups - Uncooked converted rice
  • 1/2 pounds - Frozen shelled and deveined shrimp
  • 1 packages - 10-oz pkg frozen peas
  • 2 whole - Pimentoes, Cut in strips
  • Directions:

    1. Set lobster out to thaw.

    2. Dust chicken w/ flour and brown quickly in hot oil in a Dutch oven. Sprinkle w/ salt, pepper, and onion.

    3. Cut lobster in half crosswise; remove undershell w/ scissors. Bend back shells to make tails lie flat.

    4. Add lobster, tomato, garlic, saffron and broth to chicken. Simmer, covered, for 10 minutes. Add rice; simmer 10 min. more. Stir gently. Add rice; add remaining ingredients. Simmer, covered, for 15 more minutes.
