Ingredients:

  • 1 pounds - Cod
  • 1/2 cups - Italian seasoned bread crumbs
  • 1 tablespoons - Oil or margarine
  • - Lemon pepper, to taste
  • - Lemon wedges
  • Directions:

    Coat fish w/ 1/2 C Italian seasoned bread crumbs. Heat 1 T oil/margarine in skillet over medium heat. Cook fish 5-8 min., seasoning w/ lemon pepper; turn and cook 4-5 min. until fish flakes. Serve w/ lemon wedges.

    Notes

    Other methods include:
    MICROWAVE: Place fish in microwave dish. Top 2/ 1 14-0z. can stewed tomatoes, any style. Season w/ salt and pepper and 1/4 C. Parmesan cheese. Cover; microwave HIGH 7-8 min. Serve w/ cooked rice or pasta.

    OVEN-FRY: Place fish on greased baking sheet. Combine 1/4 C melted margarine or butter and 1 C crushed cracker crumbs. Sprinkle over fish. Season w/ salt and pepper. Bake at 450 8-10 minutes. Serve w/ lemon wedges.
