Orzo with Spinach and Pine Nuts Tell a Friend

  • 2 tablespoons - pine nuts
  • 1 cloves - garlic
  • 1 teaspoons - butter
  • 1 3/4 cups - water
  • 3/4 cups - uncooked orzo
  • 1/4 teaspoons - salt
  • 1 cups - tightly packed chopped fresh spinach
  • 1/4 cups - grated parmesan cheese
  • Directions:

    Spread pine nuts in a small skillet. Cook over medium heat 1-2 minutes or until lightly toasted, stirring often. Set aside.
    Saute garlic in butter over medium heat for 1 minute. Add water, orzo, and salt. Bring to a boil. Reduce heat and cook for 12 minutes or until liquid is absorbed.
    Stir in spinach, cheese and pine nuts. Serve hot.
