Orzo with Garlic-Ginger Spring Vegetables Tell a Friend

Ingredients:

  • 1 tablespoons - Olive Oil
  • 2 tablespoons - Ginger root, peeled, minced
  • 3 cloves - Garlic, crushed
  • 2 cups - Baby Carrots
  • 2 cups - Baby Zucchini, sliced
  • 1 - Red Bell Pepper, seeded, chopped
  • 1 - Yellow Bell Pepper
  • 1 teaspoons - Chicken Bouillon granules
  • 2 1/2 cups - Orzo, cooked
  • Directions:

    1. In a skillet, heat oil over low heat. Saute the ginger root and garlic until deep brown, 4-5 minutes.
    2. Increase heat to high, add carrots. Stir fry adding zucchini, bell peppers and bouillon until veggies are tender crisp, about 3 minutes.
    3. Add orzo, toss to combine. Serve immediately.
