Ingredients:

  • 1 teaspoons - olive oil
  • 1 cups - cherry tomatoes, halved
  • 1 cups - zucchini, chopped
  • 2 cloves - garlic, minced
  • 1/2 teaspoons - Italian seasoning
  • 1/4 teaspoons - red pepper flakes
  • 3 cups - orzo, hot, cooked
  • 1/4 teaspoons - salt
  • Directions:

    Heat olive oil in a medium skillet over medium-high heat. Add cherry tomatoes, zuc chini and garlic, and saute for 2 minutes. Stir in Italian seasoning and red pepper flakes, and saute 1 minute or until zucchini is crisp-tender. Combine tomato mixture, cooked orzo, and salt, and toss well.
