  • 1/2 - small chopped onion
  • 1 tablespoons - olive oil
  • 1 cups - whole wheat orzo
  • 2 cups - reduced-sodium chicken stock
  • 1/4 teaspoons - salt
  • 2 cups - broccoli florets, steamed
  • Directions:

    In a saucepan, cook chopped onion in olive oil over medium heat for about 2 minutes. Stir in the orzo, chicken stock (or broth) and salt. Simmer, covered, for about 8 minutes or until broth is absorbed. Stir in steamed broccoli florets and serve.
