Orange Glazed Loin of Pork Tell a Friend

Ingredients:

  • 1 - six-rib loin of pork (about 3-1/2 pounds)
  • 1 1/2 teaspoons - salt
  • 1/2 teaspoons - pepper
  • 1/2 teaspoons - leaf thyme, crumbled
  • 1/2 teaspoons - ground ginger
  • 2 cloves - garlic, sliced
  • 2 cups - water
  • 1 tablespoons - grated orange rind
  • 1 cups - orange juice
  • 1/4 cups - brown sugar
  • 1 1/2 tablespoons - soy sauce
  • 1 tablespoons - corn starch
  • Directions:

    Rub pork with salt, pepper, thyme and ginger. Make incisions between ribs; insert garlic slices.

    Place on rack in roasting pan; pour 1 and 1/3 cups water in pan. Roast for 1 hour at 325 degrees F.

    Combine orange juice, orange rind, brown sugar and soy sauce; blend well. Reserve 2/3 cup for orange sauce.

    Baste roast with glaze for 1-1/2 hours.

    Sauce: Combine 2/3 cup reserved sauce with corn starch and cook until it bubbles.

    Slice loin and serve with sauce.
