Orange Glaze Chicken Tell a Friend

  • 2 cups - orange juice
  • 1/4 cups - lemon juice
  • 1/2 teaspoons - salt
  • 1/2 cups - water
  • 3/4 tablespoons - cornstarch
  • 1/4 cups - brown sugar
  • - skinless, boneless chicken breasts
  • - olive oil
  • - pineapple chunks and walnuts, optional, for Hawaiian version
  • - pepper and tomato slices, optional, for Hawaiian version
  • Directions:

    Saute chicken breasts in olive oil.

    In a saucepan, mix orange juice, lemon juice, salt, water, cornstarch and brown sugar. Cook over medium heat, stirring constantly, until sauce thickens and becomes clear.

    Place chicken in a roasting or other deep pan. Pour sauce over chicken.

    Bake at 350 degrees for 1 hour or until sauce clings to chicken.

    For Hawaiian Chicken: During last 15 minutes of baking, add pineapple chunks, pepper and tomato slices to roasting pan. Top with walnuts before serving.
