  • 2 - large carrots, thinly sliced into small rounds
  • 2 - red potatoes, diced into small pieces
  • 1 - medium zucchini, halved, cut into thick slices
  • 2 - red peppers, seeds and stem removed, chopped into medium pieces
  • 1 - small head broccoli, coarsely chopped
  • 16 ounces - Italian turkey or chicken sausage, sliced into thick coins
  • 1/2 tablespoons - dried basil
  • 1/2 tablespoons - dried oregano
  • 1/2 tablespoons - dried parsley
  • 1/2 tablespoons - garlic powder
  • 1/2 teaspoons - onion powder
  • 1/2 teaspoons - dried thyme
  • 1/8 teaspoons - red pepper flakes, optional
  • - salt and pepper, to taste
  • 4 1/2 tablespoons - olive oil
  • 1/3 cups - Parmesan cheese, for topping, optional
  • - fresh parsley, for topping, optional
  • - cooked rice or quinoa, for serving with, optional
  • Directions:

    Preheat oven to 400 degrees F. Line a large sheet pan with aluminum foil (or parchment paper) and set aside.

    Place the prepped veggies and sliced sausage on the sheet pan.

    In a small bowl combine all of the seasonings with the olive oil; stir to combine.

    Pour the seasoning mixture on top of the veggies and sausage and thoroughly toss to coat everything well.

    Place in the pre-heated oven for 15 minutes. Remove from oven; toss around the veggies and sausage and return to oven for another 10-20 minutes or until the vegetables are crisp- tender.

    Remove and sprinkle Parmesan cheese and fresh parsley over top, if desired. Serve over cooked brown rice or quinoa. if preferred.
