Oatmeal Pancakes with Blueberry Sauce Tell a Friend

Ingredients:

Oatmeal Pancake Mix
  • 2 cups - Flour
  • 2 cups - Whole Wheat Flour
  • 1 cups - Dry Milk
  • 1 1/2 cups - Quick Oats
  • 1/2 cups - Sugar
  • 3 tablespoons - Baking Powder
  • 1 teaspoons - Salt
  • Making Pancakes from Above Mix
  • 2 cups - Above Pancake Mix
  • 1 whole - Egg
  • 1 1/4 cups - Water
  • 1 tablespoons - Cooking Oil
  • Blueberry Sauce
  • 1 jars - Currant or Strawberry Jelly
  • 1 1/2 cups - Blueberries
  • Directions:

    Make Oatmeal Pancake Mix:
    Combine ingredients and stir thoroughly. Makes 6 cups.

    Make Pancakes from Mix:
    Blend water, egg, and oil together, and add to pancake mix. Stir just until moistened. Cook on hot, lightly-greased griddle until golden on both sides. Serve with blueberry sauce.

    Make Blueberry Sauce:
    In a medium saucepan over medium heat, melt currant or jelly. Stir in blueberries, and cook for about 30 seconds more. Cool to room temperature. Refrigerate for up to 1 week. Makes 1.75 cups.
