Ingredients:

  • 2/3 cups - sugar
  • 2 - egg whites
  • 1/2 teaspoons - vanilla extract
  • 1/2 cups - all-purpose flour
  • 1 teaspoons - baking powder
  • 2 cups - chopped apples, like Granny Smith
  • 1/4 cups - chopped pecans
  • Directions:

    Preheat oven to 350 degrees F. Coat an 8-inch square baking pan with cooking spray.

    In a large bowl, whisk the egg whites, sugar, and vanilla for 1-1/2 minutes or until frothy. Whisk in flour and baking powder until blended. Fold in apples and pecans. Pour into prepared pan.

    Bake 23 to 25 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.

    A healthy version of that favorite American apple pie flavor with pecans, but minus the added fat, sugar and calories. Diabetic friendly!
