Ingredients:

  • 8 whole - Eggs
  • 2 tablespoons - Water
  • 1/2 cups - Mushrooms
  • 1/2 cups - Onion
  • 1/2 cups - Green Chile
  • 1/2 cups - Ham
  • 1/2 cups - Swiss or Monterey Jack Cheese
  • 2 tablespoons - Oil or Margarine
  • Directions:

    Beat eggs in a large bowl; add water, mushrooms, onion, chile, ham, and cheese; blend well.

    Heat oil or margarine in large skillet. Pour egg mixture into skillet and cook until solid. Serve immediately with hot flour tortillas.
