Neiman Marcus White Meat of Chicken Salad Tell a Friend

  • 5 pounds - Chicken breasts
  • 3 stalks - Celery
  • 1 whole - Large onion, Quartered
  • 2 whole - Large carrots, Quartered
  • - Several whole black peppercorns
  • 1 whole - Bay leaf
  • - Salt and white pepper
  • 1/4 cups - Apple cider vinegar
  • 1 cups - Celery, Finely diced
  • 3/4 cups - Half and half
  • 2 1/4 cups - Mayonnaise (real mayo)
  • Directions:

    1. Cook the chicken breasts in 3 qts. water with the 3 celery stalks, onions, carrots, peppercorns, bay leaf and sprinkling of salt and pepper until they are well-cooked and tender. Cool, skin and debone the chicken; place in refrigerator to chill.
    2. After chilled and somewhat firm, dice chicken an sprinkle with apple cider vinegar. Add diced celery.
    3. Blend together half and half, mayonnaise and salt and white pepper to taste. (NOTE: White pepper is strong; use sparingly.) Fold this mixture into the chicken mix and adjust salt and pepper seasoning if needed.
    4. Keep chilled until ready to serve.
