  • 6 whole - Large Potatoes, Peeled and Chunked
  • - Water, Enough to cover potatoes
  • 1 tablespoons - Chicken Soup Base, too taste
  • 1/2 whole - Onion, Chopped
  • - Milk, Enough to cover the potatoes
  • 1 1/2 sticks - Butter, Quartered to melt easier
  • 4 ounces - Cream Cheese , Quartered to melt easier
  • 2 tablespoons - Sour Cream
  • 1 tablespoons - White Pepper, too taste
  • 1 tablespoons - Black Pepper, too taste
  • 1 teaspoons - Celery Seed
  • Directions:

    Boil chunked potatoes, soup base, onion and celery seed in enough water to cover well. Cook until potatoes are tender but not soft. Drain water off but leave about 1 cup in the pot. Add milk to cover potatoes. Add butter, cream cheese, sour cream and black and white pepper. Salt, if needed. Simmer until everything has melted and soup begins to thicken a little. Serve with crackers, shredded cheese and green onions.

    Make sure not to let potatoes get too mushy when boiling as they will continue to cook when all ingredients are melting together. All seasonings are too taste but the above is a good starting point.
