Mushrooms Stuffed with Ham and Cheese Tell a Friend

Ingredients:

  • 1 1/2 teaspoons - salt
  • 1/2 - lemon
  • 36 - large mushrooms, stems removed, chopped and reserved
  • 1/2 cups - prosciutto, minced
  • 1/3 cups - minced salami
  • 3/4 cups - boiled ham, minced
  • 2 tablespoons - fresh parsley
  • 1/8 teaspoons - thyme
  • 1/8 teaspoons - oregano
  • 1/4 teaspoons - dried sage
  • 1/4 teaspoons - dried basil
  • 1/4 teaspoons - freshly ground black pepper
  • 1/2 cups - grated Fontina cheese
  • 1 1/2 cups - Parmesan cheese
  • 2/3 cups - chicken stock
  • Directions:

    Add lemon juice from lemon to 3 quarts of salted, boiling water. Add mushrooms and cook 8 minutes. Drain on paper towels.

    Combine remaining ingredients in bowl with 1 cup of the Parmesan cheese.

    Pack mushroom caps with mixture and arrange in a baking pan. Add stock and bake at 350 degrees F for 10 minutes.

    Pour off the stock; sprinkle tops with Parmesan cheese, and set under broiler until lightly browned.
