Ingredients:

  • 4 pounds - button mushrooms (cremini or white)
  • 4 pounds - stock (vegetable, mushroom or chicken)
  • 4 pounds - spanish onions, chopped
  • 4 ounces - garlic, chopped
  • 4 ounces - olive oil
  • 1/8 bunches - thyme
  • - salt and pepper, to taste
  • Directions:

    1- Sauté onions, garlic, & herbs in olive oil until translucent.

    2- Add the mushrooms and sauté for 10 minutes.

    3- Add stock and cook until mushrooms are tender.

    4- Puree and season with salt and pepper accordingly.
