  • 1/2 cups - butter , divided
  • 1/4 cups - sweet onion, diced
  • 1 cups - orzo pasta, uncooked
  • 1/2 cups - fresh mushrooms, sliced
  • 1 cups - water
  • 1/2 cups - white wine
  • - garlic powder, to taste
  • - salt and pepper, to taste
  • 1/2 cups - Parmesan cheese, grated
  • 1/4 cups - fresh parsley
  • Directions:

    Melt half the butter in a skillet over medium heat. Stir in the onions, and cook until golden brown. Mix in orzo, mushrooms, and remaining butter. Cook and stir 5 minutes until butter is melted and mushrooms are tender.
    Pour water and wine into skillet and bring to a boil. Reduce heat to low. Season with garlic powder, salt and pepper. Cook 7-10 minutes, until orzo is al dente. Stir in Parmesan cheese and parsley before serving.

    I used a tri-color orzo, and also used mozzarella instead of parmesan since that was what I had on hand. Turned out great.
