  • 2 - Cinnamon sticks
  • 2 - Star anise
  • 5 - Juniper berries
  • 1 teaspoons - Coriander seeds
  • 5 - Cloves
  • 1 bottles - Zinfandel wine
  • - Peel of 1 orange
  • - Peel of 1 lemon
  • 1/2 cups - Brandy
  • 1/4 cups - Cinnamon Simple Syrup, See note below
  • - Cinnamon sticks, For garnish
  • - Orange zest, For garnish
  • Directions:

    1. Combine cinnamon sticks, star anise, juniper berries, coriander seeds and cloves in a skillet. Toast until fragrant, 2-3 min. Combine spices in cheesecloth and tie to close.
    2 Pour wine in a large pot and add orange and lemon peels, brandy and Cinnamon Simple Syrup. Heat it to 140-160 degrees and turn off.
    3. Add spices in cheesecloth and allow to steep in wine for at least 1 hour or preferably overnight.
    4. Remove spice bag or strain. Garnish with a cinnamon stick or orange zest.
    5. Serve warm, not hot.

    NOTE: For Cinnamon Simple Syrup, combine 1 C. sugar, 1/2 C. water and 2 cinnamon sticks. Bring to a boil. Cool for 30 min. Syrup can be stored in the refrigerator for up to 1 month.

    ANOTHER NOTE: This recipe is easily doubled.
