Morning Glory Muffins Tell a Friend

Ingredients:

  • 2 cups - flour
  • 2 teaspoons - baking soda
  • 1/4 teaspoons - salt
  • 2 teaspoons - cinnamon
  • 1 cups - sugar
  • 2 cups - grated carrots
  • 1/2 cups - raisins
  • 1/2 cups - chopped nuts
  • 1/2 cups - coconut
  • 1 - apple, grated, with or without peel
  • 3 - eggs
  • 1/2 cups - vegetable oil
  • 2 teaspoons - vanilla
  • 1/4 cups - any fruit juice, optional, as needed, if batter is too thick
  • Directions:

    Toss dry ingredients, fruits and nuts together.

    In a separate bowl, stir wet ingredients together; add to dry ingredients.

    Add 1/4 cup or more of any fruit juice if the batter is too dry.

    Bake at 350 degrees F for approximately 20 minutes.
