  • 1 pounds - Smoked bacon
  • 4 cloves - Garlic, finely minced
  • 3/4 cups - Mayonnaise
  • 1 loaves - Fascia or ciabatta (or other flat, tender bread), split crosswise into top and bottom
  • 8 ounces - Sun-dried tomatoes packed in olive oil, drained and roughly chopped
  • - Large Romaine leaves, from the heart
  • Directions:

    In a large skillet over medium heat, cook the bacon until it is crispy, about 8 minutes.Transfer to a paper towel to drain.

    In a medium-size bowl, combine the garlic with mayonnaise and spread on both the top and bottom pieces of bread. Scatter the tomato pieces evenly over the bottom slice of bread. Top with a layer of bacon and then the lettuce leaves. Place the top piece of bread over the filling and then slice into mini sandwiches.
