Mexican Rice Tell a Friend

Ingredients:

  • 2/3 cups - chopped onion
  • 3 tablespoons - bacon fat
  • 1 cups - raw converted white rice
  • 1 cups - chopped green pepper
  • 1 teaspoons - chili powder
  • 1 cans - 8 oz. whole tomatoes
  • 2 teaspoons - salt
  • 2 cups - water
  • Directions:

    Saute onion in hot bacon fat. Stir in rice, green pepper, chili powder, tomatoes and salt.

    Add water and bring to a boil. Then reduce heat and simmer, covered tightly, until liquid is absorbed and rice is cooked.
