Mexican Cornbread Tell a Friend

  • 2 - eggs, well beaten
  • 1 cups - buttermilk
  • 1/2 teaspoons - salt
  • 3/4 teaspoons - baking soda
  • 1 - onion, chopped
  • 2 - jalapeno peppers, chopped
  • 1/2 cups - drippings (bacon or grease drippings or cooking oil)
  • 1 cups - cornmeal
  • 1/2 cups - grated cheese, or more, to taste
  • Directions:

    Mix all ingredients together until combined well.

    Pour half of the mixture into a well-greased pan or skillet sprinkled with a little corn meal. Sprinkle the grated cheese over the mixture. Then pour in the remaining half of the batter.

    Bake for about 30 minutes at 400 degrees F or until done (test for doneness and remove from oven when finished baking).
