Ingredients:

  • 1 cups - chopped onion
  • 1 cloves - garlic, minced
  • 1 - large green pepper, chopped
  • 1 - large bay leaf, crushed
  • 2 cans - or 3 cans kidney or pinto beans
  • 1 teaspoons - curry
  • 1 1/2 cups - chopped celery
  • 3 - large tomatoes OR one 15 oz. can stewed tomatoes, chopped
  • - chili powder, to taste
  • - salt and pepper, to taste
  • 1 cans - 29 oz. tomato sauce
  • 1 teaspoons - basil
  • 1 tablespoons - paprika
  • - cooked whole wheat noodles OR brown rice, for serving with, if desired
  • Directions:

    Saute onion, garlic and green pepper.

    Add tomatoes, sauce, celery, beans and seasonings. Simmer 1/2 hour.

    Serve over whole wheat noodles or brown rice.
