Mashed Cauliflower with Parmesan and Chives Tell a Friend

  • 2 heads - (small) cauliflower, cored, leaves removed, cut into small florets
  • 2 cups - chicken or vegetable broth
  • 1/4 cups - grated Parmesan cheese
  • 1/4 cups - chopped fresh chives
  • - salt and pepper, to taste
  • Directions:

    In a medium saucepan, combine the cauliflower and broth and bring to a boil. Reduce the heat to a simmer, cover with a lid, and cook for about 15 to 20 minutes, or until cauliflower is tender but not completely falling apart.

    Use a slotted spoon to transfer the cauliflower to a food processor and puree until smooth.

    Transfer to a bowl and stir in the parmesan and chopped chives. Season with salt and pepper.

    Serve warm.
