Mario’s Short Ribs with Chocolate Tell a Friend

  • - Grapeseed or other high temperature cooking oil
  • 4 - Short Ribs
  • 1 - Onion, large, diced
  • 2 - Carrots, large, diced
  • 4 stalks - Celery, large, diced
  • 1 - Bay Leaf
  • 1 teaspoons - Thyme
  • 2 cups - Beef Stock
  • 1/2 cups - Chocolate Balsamic
  • Directions:

    Heat the oil in a pan. Season the short ribs with salt and pepper and brown on all sides.

    Place the short ribs in a crockpot. Arrange the onion, carrot and celery around the ribs. Add the bay leaf, thyme and beef stock.

    Set the crockpot to low and cook for 7-12 hours.

    1 hour before intending to serve, add the chocolate balsamic and set the crock pot to high.

    Serve the ribs with the au jus from the crockpot.
