Mambo Chicken with Mango Salsa Tell a Friend

  • 8 - boneless, skinless chicken thighs, or 4 breasts
  • 3 cloves - garlic, minced
  • 2 tablespoons - freshly grated ginger
  • 1/4 cups - soy sauce
  • 1/4 cups - freshly squeezed lime juice
  • Mango Salsa
  • 2 - mangos, peeled, pitted, cut into 1/4-inch cubes
  • 3 tablespoons - freshly squeezed lime juice
  • 2 - jalapeno peppers, seeded, membranes removed, minced
  • 3 - green onions, finely sliced
  • 2/3 cups - lightly packed cilantro leaves, stems discarded, coarsely chopped
  • Directions:

    Put chicken and all main ingredients into an oven proof baking dish; combine evenly to mix. Cover and leave in refrigerator to marinate for 2-4 hours.

    Make salsa:
    Combine all salsa ingredients in a bowl and mix thoroughly with fork. Reserve.

    Preheat oven to 375° F. Bake chicken dish for 25 minutes or until chicken is cooked through.

    To serve, spoon a generous serving of salsa onto plate and top with chicken.
