Lyonnaise Potato Quiche Tell a Friend

  • - 9-inch unbaked pie shell
  • 1 - egg white, slightly beaten
  • 2 cups - grated Swiss cheese
  • 4 - eggs
  • 1 cups - half-and-half OR light cream
  • 1/4 teaspoons - salt
  • 1/8 teaspoons - nutmeg
  • - dash of pepper
  • 2 cups - sliced potato, 1/4-inch thick
  • 1 cups - chopped onion
  • 1 - medium green pepper, cut into 1-inch cubes
  • - salt and pepper
  • Directions:

    Brush inside of pie shell with egg white; refrigerate. Preheat oven to 375 degrees F.

    In medium bowl, with a wire whisk, combine eggs, half-and-half, salt, nutmeg and pepper just until combined.

    In 2 cups boiling water, in medium skillet, cook, covered, sliced potatoes, onion, and green peppers with 1/4 teaspoon salt and dash of pepper for 5 minutes or just until partially tender. Drain well.

    Sprinkle 1 cup of grated cheese into bottom of pie shell. Over grated cheese, overlap potatoes and green pepper in bottom of prepared dish. Sprinkle with remaining cup of cheese; pour egg mixture over top.

    Bake 35 minutes or just until puffy and golden. Remove to rack to cool 10 minutes.

    If desired, garnish center with bouquet of parsley.
