  • 12 - eggs
  • 3/4 cups - milk
  • - veggies (green or red pepper, onion, mushroom, tomatoes, etc), chopped
  • - Meat (diced ham, cooked turkey sausage, bacon, etc), cooked, chopped
  • - shredded cheddar cheese, for topping
  • Directions:

    Whisk together the milk and eggs with a little salt and pepper.

    Pour mixture evenly divided into the 12 muffin tins, filling each about half full (if you have extra mixture left - save it to pour over the toppings after adding those).

    Add the toppings of your choice to each one.

    Bake at 375 degrees F for about 17-20 minutes until cooked through and lightly browned.

    Flip them out of the muffin tins and top with shredded cheese before serving. (Optional: add shredded cheese during last 5 minutes of baking if you're planning to store these for later use).
