Low Carb Cauliflower Hummus Tell a Friend

  • 3 cups - raw cauliflower florets
  • 2 tablespoons - water
  • 2 tablespoons - avocado or olive oil
  • 1/2 teaspoons - salt
  • 3 whole - garlic cloves
  • 1 1/2 tablespoons - Tahini paste
  • 3 tablespoons - lemon juice
  • 2 cloves - raw garlic (in addition to above), crushed
  • 3 tablespoons - extra virgin olive oil
  • 3/4 teaspoons - kosher salt
  • - smoked paprika and extra olive oil, for serving
  • Directions:

    Combine cauliflower, water, avocado or olive oil, kosher salt, and whole garlic cloves in a microwave-safe container. Microwave for about 15 minutes (until softened and darkened in color).

    Place the mixture into a magic bullet, blender, or food processor and blend. Add tahini paste, lemon juice, crushed raw garlic cloves, olive oil, and kosher salt.
    Blend until mostly smooth. Taste and adjust seasoning as necessary.

    To serve, place the hummus in a bowl, drizzle with extra virgin olive oil, and add a sprinkle of smoked paprika. Serve with thinly sliced tart apples, celery sticks, raw radish slices, or your favorite other vegetables.
