Ingredients:

  • 3 tablespoons - butter
  • 1/4 cups - fresh mushrooms, chopped
  • 2 tablespoons - onion, chopped
  • 2 tablespoons - celery, chopped
  • 2 tablespoons - carrot, chopped
  • 1 cans - chicken broth, 14.5 ounces
  • 1/8 teaspoons - salt
  • 1 pinchs - cayenne pepper
  • 1 1/2 cups - half-and-half
  • 1/2 cups - dry white wine
  • 1/2 pounds - lump lobster meat, cooked
  • Directions:

    1.Melt the butter in a large saucepan over medium-low heat. Add the mushrooms, onion, celery, and carrot. Cook and stir until tender, about 10 minutes. Stir in the chicken broth, and season with salt and cayenne pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.

    2. Add 1/4 cup of the lobster meat, and use a stick blender to blend the ingredients in the pan until mixture is smooth (or very carefully pour the vegetable and broth mixture into the container of a blender; cover, and process until smooth; return to the saucepan).

    3. Stir in the half-and-half, white wine, and remaining lobster meat. Cook over low heat, stirring frequently until thickened, about 30 minutes. (If you desire additional thickening, stir 1 teaspoon of cornstarch with 2 teaspoons cold water and add to the soup during the last 5 minutes of cooking.)

    Notes

    I made a mess the first time, pouring it back and forth into the blender. Using a hand-held one-beater blender and blending it in the pan is much simpler.
