Ingredients:

  • 1 tablespoons - vegetable oil
  • 2 - large scallions, sliced (white and green parts)
  • 1 cloves - garlic, minced
  • 1/2 - red bell pepper, diced
  • 1/2 pounds - lean ground turkey
  • 1/2 cups - frozen corn kernels
  • 4 teaspoons - chili powder
  • 2 teaspoons - ground cumin
  • 1/2 teaspoons - kosher salt
  • 1/2 teaspoons - black pepper
  • 1 cups - cooked quinoa
  • 1/2 - halved cherry tomatoes
  • 1/4 cups - cilantro
  • 1/4 cups - fat-free Greek yogurt
  • 2 tablespoons - pepitas
  • 1/2 - jalapeno, sliced
  • - lime wedges, for serving
  • Directions:

    Heat oil over medium-high heat in large skillet. Cook white parts of scallions, garlic, and bell pepper until soft (about 4 minutes).

    Add turkey and cook until browned and cooked through, 5 minutes.

    Stir in corn, chili powder, cumin, salt and pepper. Remove from heat.

    Divide quinoa between 2 bowl and top with turkey mixture and remaining ingredients.

    Serve with lime wedges.
