Lemony Blueberry Muffins Tell a Friend

Ingredients:

  • 3 tablespoons - oleo
  • 1/4 cups - brown sugar
  • 1 - egg, slightly beaten
  • 2 teaspoons - lemon juice
  • 1 1/2 teaspoons - grated lemon rind, divided
  • 1 1/2 cups - unsifted flour
  • 1 teaspoons - baking powder
  • 1 teaspoons - baking soda
  • 1/4 teaspoons - salt
  • 1 cups - plain yogurt
  • 3/4 cups - frozen blueberries
  • 1 tablespoons - granulated sugar
  • Directions:

    Cream together oleo and brown sugar; beat in egg. Then add lemon juice and 1 teaspoon lemon rind.

    Stir in dry ingredients and blueberries.

    Spoon into muffin tings and top with granulated sugar and remaining lemon rind.

    Bake at 375 degrees F for 25 to 30 minutes.
