Lemon Squares Tell a Friend

Ingredients:

  • 2 cups - Flour
  • 2 1/2 cups - Granulated sugar
  • 3/4 cups - Butter
  • 1 teaspoons - Cold water
  • 4 - Eggs
  • 2 tablespoons - Flour
  • 1/2 teaspoons - Baking powder
  • 1/4 cups - Lemon juice
  • 1 teaspoons - Lemon rind
  • - Powdered sugar
  • Directions:

    Mix 2 cups flour, 1/2 cup of sugar, butter and cold water. Press into ungreased 9x13 pan. Bake 15-20 minutes at 350°.

    Mix eggs, 2 T. flour, baking powder, 2 cups of sugar, lemon juice and lemon rind. Beat well. Pour over warm crust and return to oven. Bake 25 minutes.

    Remove from oven. Run sharp knife around 4 sides of pan to loosen crust. Cool completely. Sprinkle powdered sugar over top. Cut in squares, store in tin.
