Lemon Dill Rice Tell a Friend

Ingredients:

  • 3 tablespoons - olive oil
  • 1 cups - long-grain white rice
  • 1 cups - finely diced celery
  • 1 cups - finely diced onion
  • 1 cloves - garlic, pressed
  • 1 3/4 cups - chicken stock
  • 2 tablespoons - fresh lemon juice
  • 2 tablespoons - butter
  • 1/4 cups - minced fresh dill
  • 1 tablespoons - sugar
  • 1/2 teaspoons - salt
  • 1/4 teaspoons - pepper
  • 5 - lemon slices
  • - sprigs of dill, for garnish
  • Directions:

    In a casserole, cook rice in oil until brown.

    Add celery, onion and garlic. Cook for 3 minutes.

    Add chicken stock, lemon juice, butter, dill, sugar, salt and pepper. Bring to a boil, then reduce heat.

    Place lemon slices on top, cover and cook for 20 minutes or until juice is absorbed. Garnish with dill.
