Layered Southwest Salad Tell a Friend

Ingredients:

  • 6 cups - shredded lettuce
  • 3 cups - rotisserie chicken, shredded
  • 2 cups - chopped tomatoes
  • 2 cups - canned black beans, rinsed
  • 1 cups - sliced red onion
  • 1 cups - mayonnaise
  • 1 cups - sour cream
  • 1/2 cups - salsa
  • 1 tablespoons - finely chopped cilantro
  • 2 cups - shredded sharp cheddar cheese
  • 2 slices - bacon, fried and crumbled
  • Directions:

    1. Layer ingredients in 2-quart serving bowl: lettuce, chicken, tomatoes, black beans and onions.

    2. In a separate bowl mix mayonnaise, sour cream, salsa and cilantro.

    3. Spread dressing mixture over dry ingredients to the edge of the bowl.

    4. Top with grated cheese. Chill several hours or overnight.

    5. Garnish with more cheese and bacon before serving.
