Layered Chicken Enchiladas Tell a Friend

Ingredients:

  • 1/2 cups - corn oil
  • 6 - or 8 corn tortillas
  • 2 cups - grated Monterey Jack cheese
  • 1 cups - cubed cooked chicken
  • 1 cans - (4.5 oz.) chopped green chilies
  • 1/4 cups - chopped onion
  • 1 cans - or 2 cans green chili enchilada sauce
  • Directions:

    Heat oil and dip tortillas in it for 2 to 3 seconds to soften. Place in bottom of casserole, and top with 1/2 cup of cheese, 1/2 cup of chicken and chopped onion. Repeat with another layer of tortillas, cheese, chicken, and onions.

    Pour enchilada sauce over all and top with cheese.

    Bake at 350 degrees F for 15 to 20 minutes.
