Nut Filling
  • 3 pounds - shelled and ground walnuts
  • 2 cups - to 3 cups sugar
  • 1/3 cups - scalded milk, or more, as needed
  • Kolache dough
  • 1/4 cups - warm water
  • 2 packages - dry yeast
  • 1 1/4 cups - milk
  • 1 cups - sugar
  • 2/3 cups - shortening
  • 3 - eggs
  • 6 1/2 cups - flour
  • 1 1/2 teaspoons - salt
  • - one beaten egg mixed with a little water, for brushing on dough
  • Directions:

    For nut filling, combine all ingredients, adding more milk as needed so that nuts stick together and spread easily. (You may also use an apricot or poppyseed filling).

    For Dough:
    Dissolve yeast in warm water.

    Add sugar, shortening and eggs to scalded milk. Add yeast mixture to milk mixture when milk mixture is lukewarm.

    Sift flour into liquid with salt; knead until smooth and elastic. Cover and let rise until double, about 1 to 2 hours.

    Punch dough down and divide into 6-8 balls. Roll each ball into a rectangle; spread to edges with nut mixture. Roll up and place seam side down on parchment covered cookie sheet. Make 4 diagonal slits across the top of each roll to let steam escape.

    Let rise one hour more. Just before baking, brush rolls with beaten egg and a tinge of water. Bake at 350 degrees F for 25 minutes.
