  • 1 cups - Chicken Broth
  • 1 - Onion, Chopped
  • 4 dashes - Tony Chachere's Seasoning
  • 1 cans - Chopped Green Chilies, 4.5 ounce can
  • 1 cans - Mexican Rotel
  • 2 cans - Cream of Chicken Soup
  • 8 ounces - Velveeta
  • 4 - Chicken Breast, Cooked/Shredded
  • 1 bags - Doritos Chips, Crushed
  • 2 cups - Sharp Cheddar, Shredded
  • Directions:

    In large pot, add chicken broth, chopped onion and Tony’s Seasoning (to taste). Simmer until onion is tender, and then add green chilies, Rotel tomatoes, soup and Velveeta. Cook on low until Velveeta is melted, stir frequently to prevent scorching. Add chicken to the mixture.

    In 9x13 baking dish add 1 cup of the soup mixture and rotate the dish to cover bottom. Layer ½ the bag of crushed Doritos, ½ of the remaining soup mixture and 1 cup of shredded cheese. Repeat layers of chips and soup mixture only.

    Cover and bake at 350° for 35 minutes. Uncover, top with remaining cheese and return to oven for 10 more minutes. Remove, cover and let sit for 10 minutes before serving.

    ** Optional Method - 3 Cans of Chicken Breast (12.5 oz cans) can be substituted for the cooked/shredded chicken. Don't DRAIN, add canned chicken with the onion & Tony's in the beginning. OMIT chicken broth.
