Jerk Chicken Thighs with Mango Salsa Tell a Friend

Chicken and Seasoning
  • 3/4 teaspoons - ground cinnamon
  • 3/4 teaspoons - ground allspice
  • 1/2 teaspoons - garlic salt
  • 1/4 teaspoons - dried thyme
  • 1/4 teaspoons - salt
  • 1/4 teaspoons - freshly ground pepper
  • 1/8 teaspoons - cayenne pepper, or to taste
  • 2 tablespoons - lime juice
  • 1 pounds - boneless, skinless chicken thighs
  • Salsa
  • 1 - large mango, diced
  • 2 - small shallots, finely chopped
  • 1 - large jalapeno, cored, seeded, and minced
  • 1 tablespoons - fresh cilantro, minced
  • 1/8 teaspoons - salt, or to taste
  • Directions:

    1. Combine cinnamon, allspice, garlic salt, thyme, salt, black pepper, cayenne pepper and 1 Tbls of lime juice. Mix to a paste. Brush both sides of chicken with paste; set aside for 10 minutes to allow flavors to blend, or make in advance and refrigerate until needed.

    2. Combine mango, shallot, jalapeno, cilantro, remaining Tbls of lime juice and salt in a bowl and refrigerate until needed.

    3. Turn on grill to medium heat. Grill chicken for 10 minutes; flip and grill until cooked through, about 6 minutes more.

    To make cilantro-lime rice, cook white rice, then toss in a handful of chopped cilantro and a splash of lime juice to taste. If you have leftover chicken, slice it and serve over arugula or lettuce for a salad the next night.
