  • 2 - Eggs
  • 1 cans - Small can Cream Corn
  • 1 cups - Milk
  • 1 cups - Yellow Cornmeal
  • 1/4 cups - Oil
  • 2 - Jalapenos, finely chopped
  • 1 - medium Onion, finely chopped
  • 1/2 teaspoons - Garlic Salt
  • 1/2 teaspoons - Baking Soda
  • 3/4 teaspoons - Salt
  • 1 cups - Cheddar Cheese - shredded
  • Directions:

    Heat oven to 350°. Mix all ingredients together and pour in greased pan. Bake for 45 min.

    This is a very moist recipe and delicious! (If you like a dryer, more cake-like, less moist texture, then subbing evap milk would be fine, but not as good in my opinion - just a note.)
    Also, this is easily doubled.
    Adjust amount of jalapenos according to how spicy you like it (or for your kids :). All of my kids like it except one who thinks salt is spicy. ; )
