Italian Crockpot Chicken and Vegetables Tell a Friend

  • 2 cups - fresh or frozen green beans, whole, trimmed
  • 1/2 cups - sliced sweet peppers (yellow, orange or red)
  • 1/2 cups - sliced or diced onion
  • 1 cups - sliced mushrooms
  • 1 cups - baby carrots (or peeled, sliced carrots)
  • 2 pounds - chicken tenders or chicken breasts cut into strips
  • 2 teaspoons - Italian seasoning, or more, to taste
  • 2 cups - broth (chicken or vegetable)
  • 3 cups - cooked rice, optional, for serving with
  • Directions:

    Layer the vegetables in the crockpot: green beans, then peppers and onions, topped with carrots and mushrooms.

    Sprinkle all with Italian seasoning and salt and pepper.

    Season chicken pieces with salt and pepper and either Italian seasoning or some garlic powder and onion powder. Set chicken into crockpot on top of vegetables.

    Pour broth over all and cook on high heat for 4 hours or on low heat for 8 hours.

    If desired, cook up some brown rice for serving with the chicken and vegetables.

    I came home after a lunch one day, threw all of this in the crockpot in less than 30 minutes, and rushed off to meetings for the rest of the day; still enjoyed a delicious meal with the family when I returned home.
