Italian Cream Cake Tell a Friend

Ingredients:

Cake
  • 1 cups - buttermilk
  • 1 teaspoons - baking soda
  • 5 - eggs, separated
  • 2 cups - sugar
  • 1 sticks - margarine
  • 1/2 cups - shortening
  • 2 cups - flour
  • 1 teaspoons - vanilla
  • 1 cups - finely chopped pecans or walnuts
  • 1 cans - coconut (small can)
  • Cream Cheese Frosting
  • 8 ounces - cream cheese, softened
  • 1 sticks - margarine
  • 1 pounds - box powdered sugar (3 cups)
  • 1 teaspoons - vanilla
  • 1/2 cups - nuts, finely chopped
  • Directions:

    For Cake:

    Combine baking soda and buttermilk and set aside.

    Beat egg whites until stiff and set aside.

    Cream sugar, margarine and shortening together. Add egg yolks one at a time, beating well after each addition.

    Add buttermilk alternately with flour to creamed mixture. Stir in vanilla. Fold in egg whites; gently stir in nuts and coconut.

    Bake at 325 degrees F in three 7- or 8-inch round pans (about 20-25 minutes until lightly browned). Cool.

    Meanwhile, for Frosting:
    Blend together cream cheese, margarine, vanilla, and powdered sugar until creamy.

    Frost cake, then sprinkle more finely chopped nuts on top of cake.
