Italian Cauliflower Tell a Friend

Ingredients:

  • 1 heads - cauliflower, cut int florettes
  • 3 tablespoons - olive oil
  • 1/2 - large onion, chopped
  • 2 cloves - garlic, minced
  • 1 cups - tomatoes, chopped
  • 1/4 cups - white wine
  • 1/3 cups - green olives, chopped
  • 2 tablespoons - capers
  • 1/2 cups - chopped fresh parsley
  • Directions:

    Saute onion in olive oil. Add garlic, tomatoes, white wine, salt and pepper.

    Add cauliflower and stir to mix. Add a little water to cover cauliflower; cook 5 to 7 minutes.

    Remove cauliflower; cook sauce for 10 minutes. Add remaining ingredients, and cook for 2 minutes.

    Pour mixture over cauliflower and serve.
