  • 3 cups - sugar
  • 1/2 cups - cornstarch
  • 1/8 teaspoons - salt
  • 3 cups - cold water
  • 3/4 cups - fresh lemon juice
  • 8 - large egg yolks
  • 4 teaspoons - grated lemon peel
  • 1/4 cups - (1/2 stick) butter
  • Directions:

    Combine sugar, cornstarch and salt in heavy saucepan. Gradually mix in water. Add lemon juice, yolks and lemon peel.

    Bring to a simmer over medium heat, stirring constantly. Boil 1 minute.

    Remove from heat, add butter and mix until melted. Cool completely without stirring.

    Cover and refrigerate. Spoon into tarts to serve.
