  • 1 cans - stewed tomatoes, 28 oz.
  • 3 - large jalapenos
  • 4 cloves - garlic, peeled
  • - salt, to taste
  • 1/2 teaspoons - cumin powder
  • 1/2 teaspoons - oregano
  • 1/4 cups - cilantro leaves
  • Directions:

    Roast jalapenos (in the oven under broiler) until skins are blackened. Do not remove skins but remove stems.

    Blend jalapenos in juice of tomatoes (no tomatoes at this point).

    Add seasonings, garlic, tomatoes, and cilantro leaves; chop in blender for 3 seconds.

    Keep refrigerated.

    Stewed tomatoes usually have added sugar, so read label.

    You can substitute two 14.5 oz cans of petite diced tomatoes. Also you can use the Mexican stewed tomatoes with green pepper and onion, if desired.
